The Mad Men Cookbook credits Barbetta’s with the addition to the book…I like the baby peppers grilled, unpeeled, and drizzled with bagna cauda…very good!
I adapted the Crabmeat Mimosa recipe from Jackie Kennedy’s recipe, yogurt instead of mayo and my homemade Bloody Mary cocktail sauce that contained most of the other ingredients and skipped the egg yolks, forgot the parsley, but it was still delicious and would make a great light lunch or dinner.
Ingredients: 2 ripe avocados, 2 ounces sweet red onion or two green onions minced, 2+ teaspoons lemon juice, and salt to taste. Blend, cover and reserve. In a large bowl combine 3 heaping tablespoons Greek yogurt and 2 tablespoons Bloody Mary cocktail sauce, blend and gently add 1/2 pound crabmeat.
Line bottoms of chilled, open champagne glasses or small glass serving dishes with baby lettuces or watercress. Divide crab mixture evenly among glasses. Top each with a dollop of mashed avocado mixture.
I skipped the egg yolk step: Press egg yolks through fine mesh sieve; combine with parsley in a small bowl. Sprinkle yolk/parsley mixture evenly over each portion. Mimosas can be covered and refrigerated for up to 3 hours.
