Probably a million recipes for pimento cheese, a staple in the south, exist online and just as many in southern households. I just make it with what I have in the house when Mikey shows up with a big bulk food store sized hunk block of cheese and today I made it with roasted peppers and perky little peppadew peppers.
~ Thoroughly blend the following ingredients~
2 cups of grated sharp cheddar
3-4 peppadew peppers, finely diced
2/3 cup roasted red peppers, diced (the whole peppers in the jar from Costco or Sam’s Club
4 ounces soft cream cheese
4 tablespoons mayo
¼ cup yellow onion, diced and softened (sauté briefly until soft)
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon Dijon
Pinch of white pepper
Pinch of cayenne
A little hot sauce if you don’t use peppadew peppers
½ inch slices of bread, buttered on all sides, 1st slice, pimento cheese top with ham, 2nd slice cheese and ham, close sandwich and grill in a pan or Panini press.
