The End of the Spinach Ricotta—Stuffed Shells

I finally used the last of the ricotta spinach filling, further enhanced with a little mascarpone for “stuffed shells” and with just enough sauce left from our spaghetti & meatball dinner an easy dinner to put together to freeze for another night, just add a salad and garlic bread for a satisfying meal.

For our leftovers dinner night I did manage to make a pretty nice pumpkin creme brulee so the whole dinner did not feel at all like a leftover dinner night.
