Freezer diving produced the little picnic pork for the splendid moist and juicy Italian pork sandwiches. Seasoned with the usual garlic and herb blend slathered all over and tucked into slits in the pork, ready to be browned and then slow roasted for a few hours, juicy fall apart lusciousness ready for a toasted Italian roll from Luigi’s then topped with broccoli rabe that was sauteed in a little EVOO and the juices from the pork. Fill the toasted Italian roll with meat top with broccoli rabe and a slice or two of provolone, melt under broiler.
