Oven Roasted Clams and Potatoes with Fennel

To finish off a few clams for a quick lunch I found a fennel bulb and a few potatoes to roast Michael enjoyed a tomato salad and a few of the roasted potatoes, no clams for him!  For an easy to assemble “clam bake” grab an oven baking pan and toss in sliced fennel, halved small potatoes and a few cloves of smashed garlic.  Drizzle olive oil over, season with salt, pepper, a sprinkle of red pepper flakes, toss and roast for 20 minutes at 375º, test potatoes for doneness, toss in about 1/4 cup white wine, washed clams and continue baking until the clams pop open 7-10 minutes.  I like to toss in a knob of butter at the end so I have a little dipping juice for the clams…

I think that a nice spicy chorizo, linguica or Italian sausage roasted along with the potatoes would be fantastic in this dish.
