Gabriele’s Granola

INGREDIENTS…Prep Time: 10 min / Cooking Time: 10 min / Makes: 3 Cups

1 cup Quaker rolled oats
3/4 cup all natural unsweetened flaked coconut
2 cups sliced almonds
1/2 cup pine nuts
1/2 cup raw walnuts, crushed by hand ( I prefer pecans)
1/4 cup coconut oil 1/4 cup honey
2 tablespoons maple syrup 1 teaspoon sea salt
1 cup chopped dried apricots
Yogurt and fresh fruit, for serving

Heat oven to 275º F.
Add all the ingredients to a large bowl, except for the dried fruit, and mix together.
Spread evenly on two parchment lined sheet trays and bake for 30 minutes.
Remove from oven, stir in the dried fruit and let cool for at least 15 minutes.
Serve over yogurt and seasonal fresh fruit.
